Honey Madeleine

A cinnamon hot chocolate together with these honey wonders can be an experience to remember.

For 16 madeleines you need: ½ organic lemon, 3 eggs, 150 g (5.2 oz) melted salted butter, 150 g (1.1 cup) flour, 150 g (5.2 oz) sugar, 2 tablespoons acacia honey, 1 teaspoon baking powder.

Method: melt the butter with honey. Wash and clean the lemon, then grate the peel. Sift the flour with baking powder. Whisk the eggs with sugar until you get a frothy cream. Work in the sifted flour and baking powder, lemon peel and the butter with honey. Stir until smooth.
Let stand in the fridge for 1 hour and then in a 270°C preheated oven cook for 4 minutes, then change to 210°C for 6 or 7 minutes more.

Take the madeleines out of the oven and serve at room temperature.
